A delicious and comforting Chinese noodle soup featuring shrimp, vegetables, and flavorful broth.

  • 8 ounces rice noodles
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 4 cups chicken or vegetable broth
  • 2 cups water
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 cup bok choy, chopped
  • 1 cup shiitake mushrooms, sliced
  • 1 cup shrimp, peeled and deveined
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Pour in the chicken or vegetable broth and water. Bring to a simmer.
  4. Stir in the soy sauce and sesame oil. Add the chopped bok choy and sliced shiitake mushrooms. Cook for 3-4 minutes until the vegetables are tender.
  5. Add the shrimp to the pot and cook for an additional 2-3 minutes until they turn pink and opaque.
  6. Season the soup with salt and pepper to taste.
  7. Divide the cooked rice noodles among serving bowls and ladle the hot soup over the noodles.
  8. Garnish with sliced green onions and serve with lime wedges on the side.

Notes

  • For a spicier soup, add a teaspoon of chili paste or sliced jalapeños.
  • You can substitute the shrimp with chicken or tofu for a different protein option.
