1 pound beef sirloin, thinly sliced
2 tablespoons vegetable oil
4 cloves garlic, minced
1 teaspoon red pepper flakes (adjust to taste)
2 cups fresh spinach, washed and dried
1 bell pepper, sliced (any color)
1 medium onion, sliced
3 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon cornstarch
1 tablespoon water
Salt and pepper to taste
Cooked rice or noodles, for serving
Instructions
In a small bowl, mix the soy sauce, oyster sauce, cornstarch, and water. Set aside.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced beef and season with salt and pepper. Stir-fry for about 3-4 minutes until browned. Remove the beef from the skillet and set aside.
In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and red pepper flakes, and stir-fry for about 30 seconds until fragrant.
Add the sliced onion and bell pepper to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
Return the beef to the skillet and pour the sauce mixture over everything. Stir well to combine and cook for another 2-3 minutes until the sauce thickens.
Add the spinach and stir until wilted, about 1-2 minutes.
Serve hot over cooked rice or noodles.
Notes
For a vegetarian version, substitute beef with tofu or tempeh and use vegetable broth instead of oyster sauce.
Add other vegetables like broccoli, snap peas, or carrots for extra nutrition and color.
