1 pound ground chicken
1 medium zucchini, grated (about 1 cup)
1 cup fresh corn kernels (about 2 ears of corn)
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1 clove garlic, minced
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 tablespoon olive oil (for cooking)
4 hamburger buns
Lettuce, tomato, and your favorite condiments for serving
Instructions
In a large mixing bowl, combine the ground chicken, grated zucchini, corn kernels, breadcrumbs, Parmesan cheese, parsley, garlic, onion powder, salt, black pepper, and paprika. Mix until all ingredients are well incorporated.
Divide the mixture into four equal portions and shape each portion into a patty about 1 inch thick.
Heat olive oil in a large skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side, or until the internal temperature reaches 165°F and the patties are golden brown.
While the patties are cooking, toast the hamburger buns in a separate skillet or under a broiler until lightly browned.
Assemble the burgers by placing a chicken patty on each bun and topping with lettuce, tomato, and your favorite condiments. Serve immediately.
Notes
For added flavor, mix in some crumbled feta cheese or diced jalapeños into the burger mixture.
If you prefer grilling, these patties can also be cooked on a preheated grill over medium heat for about 5-6 minutes per side.
