  • 1 cup grated carrots
  • 1 cup chopped spinach
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Instructions

  1. In a large bowl, combine ground chicken, grated carrots, chopped spinach, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, salt, and pepper.
  2. Mix until all ingredients are well combined.
  3. Form the mixture into patties, about 1/2 inch thick.
  4. Heat olive oil in a skillet over medium heat.
  5. Cook the patties for 5-6 minutes on each side, or until golden brown and cooked through.
