A quick and tasty Chicken Udon Stir-Fry recipe that combines tender chicken, fresh vegetables, and chewy udon noodles in a savory sauce.

  • 2 boneless, skinless chicken breasts (about 1 pound), sliced thinly
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 8 ounces udon noodles
  • 1 tablespoon vegetable oil
  • 2 cups mixed vegetables (such as bell peppers, carrots, and snap peas)
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Instructions

  1. In a bowl, combine sliced chicken, soy sauce, oyster sauce, and sesame oil. Marinate for 10 minutes while you prepare the other ingredients.
  2. Cook udon noodles according to package instructions, then drain and set aside.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add marinated chicken and stir-fry for about 5-7 minutes until cooked through. Remove chicken from the skillet and set aside.
  4. In the same skillet, add mixed vegetables, garlic, and ginger. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
  5. Return the cooked chicken to the skillet, add the udon noodles, and toss everything together. Stir-fry for an additional 2-3 minutes until heated through. Season with salt and pepper to taste.
  6. Serve hot, garnished with sliced green onions and sesame seeds if desired.

Notes

  • For a spicier version, add red pepper flakes or sriracha to the stir-fry.
  • You can also substitute chicken with shrimp or tofu for a different protein option.
