1 pound ground chicken
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/2 cup chopped onion
1/2 cup chopped bell pepper
2 cloves garlic, minced
1/4 cup milk
1 large egg
1 tablespoon Worcestershire sauce
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup ketchup (for topping)
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, onion, bell pepper, garlic, milk, egg, Worcestershire sauce, oregano, salt, and black pepper. Mix until well combined.
Transfer the mixture to a loaf pan and shape it into a loaf.
Spread the ketchup evenly over the top of the meatloaf.
Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 165°F (74°C).
Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
For added moisture, incorporate 1/4 cup of finely grated zucchini or carrot into the mixture.
Try using different herbs like thyme or basil for a flavor twist, or add a teaspoon of hot sauce for a little kick.
