1 pound ground chicken
1 small onion, finely chopped
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
1 egg, beaten
1/2 cup breadcrumbs
1 cup plain Greek yogurt
2 cloves garlic, minced
1 tablespoon lemon juice
1/2 teaspoon salt
1 tablespoon fresh dill or parsley, chopped (optional)
Instructions
Preheat your oven to 400°F. Line a baking sheet with parchment paper.
In a large bowl, combine the ground chicken, chopped onion, minced garlic, parsley, cumin, coriander, paprika, salt, black pepper, cayenne pepper (if using), beaten egg, and breadcrumbs. Mix until well combined.
Shape the mixture into small oval or cylindrical kofta (about 2-3 inches long) and place them on the prepared baking sheet.
Bake in the preheated oven for 20-25 minutes, or until the kofta are cooked through and golden brown.
While the kofta are baking, prepare the garlic yogurt sauce. In a bowl, mix together the Greek yogurt, minced garlic, lemon juice, salt, and dill or parsley (if using). Stir until smooth.
Once the kofta are done, remove them from the oven and let them cool for a few minutes. Serve warm with the garlic yogurt sauce on the side.
Notes
For a spicier kick, add chopped jalapeños to the kofta mixture.
You can also grill the kofta instead of baking for a smoky flavor.
Serve with pita bread and a side salad for a complete meal.
