A delicious twist on traditional meatloaf, combining ground chicken with ham and Swiss cheese for a unique dinner delight.

  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • 1 large egg
  • 1 cup diced ham
  • 1 cup shredded Swiss cheese
  • 1/2 cup milk
  • 1/4 cup Dijon mustard

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
  2. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, garlic powder, onion powder, salt, black pepper, smoked paprika, and egg. Mix until well combined.
  3. In a separate bowl, mix the diced ham and shredded Swiss cheese together.
  4. Spread half of the chicken mixture into the bottom of the prepared loaf pan. Layer the ham and cheese mixture on top, then spread the remaining chicken mixture over it, sealing the edges.
  5. In a small bowl, whisk together the milk and Dijon mustard. Pour this mixture evenly over the top of the meatloaf.
  6. Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 165°F (74°C). Let it rest for 10 minutes before slicing.

Notes

  • For a gluten-free version, substitute breadcrumbs with gluten-free breadcrumbs or crushed gluten-free crackers.
  • Add a layer of sautéed spinach or mushrooms for extra flavor and nutrition.
