Heat olive oil in a large skillet over medium heat. Add the sliced chicken and season with garlic powder, onion powder, salt, and pepper. Cook for about 5-7 minutes, or until the chicken is cooked through and no longer pink.
Add the sliced onion and green bell pepper to the skillet. Sauté for an additional 3-4 minutes, or until the vegetables are tender.
Place a slice of provolone cheese over the chicken and vegetable mixture in the skillet. Cover the skillet with a lid and let it cook for 1-2 minutes, or until the cheese is melted.
While the cheese is melting, lightly toast the hoagie rolls in a separate skillet or under the broiler for a minute or two.
Once the cheese has melted, divide the chicken and vegetable mixture evenly among the toasted hoagie rolls. Add sliced jalapeños if desired.
