A quick and healthy Chicken and Cabbage Stir-Fry recipe that is perfect for a weeknight dinner.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breast, sliced into thin strips
  • 4 cups green cabbage, shredded
  • 1 bell pepper, sliced (any color)
  • 2 carrots, julienned
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon vegetable oil
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the sesame oil, garlic, and ginger. Sauté for about 30 seconds until fragrant.
  3. Add the shredded cabbage, bell pepper, and carrots to the skillet. Stir-fry for about 5-6 minutes until the vegetables are tender but still crisp.
  4. Return the cooked chicken to the skillet. Pour in the soy sauce and add red pepper flakes if using. Stir well to combine and cook for an additional 2-3 minutes to heat everything through.
  5. Remove from heat and garnish with sliced green onions before serving.

Notes

  • For added crunch, toss in some chopped peanuts or cashews just before serving.
  • Substitute the chicken with tofu or shrimp for a different protein option.
