Chicken in Boursin Sauce with Garlic and Fine Herbs is a creamy and flavorful dish that combines tender chicken breasts with a rich sauce made from Boursin cheese, heavy cream, and aromatic herbs.

  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 8 ounces Boursin cheese with garlic and fine herbs
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and black pepper. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  2. In the same skillet, reduce the heat to low. Add the heavy cream, Boursin cheese, Dijon mustard, thyme, parsley, garlic powder, and red pepper flakes (if using). Stir until the cheese has melted and the sauce is smooth.
  3. Return the chicken to the skillet, spooning the sauce over the top. Let it simmer for an additional 3-5 minutes to heat through and allow the flavors to meld.
  4. Serve the chicken hot, garnished with fresh parsley if desired.

Notes

  • For a lighter version, substitute half of the heavy cream with chicken broth or use a low-fat cream alternative.
  • Add sautéed mushrooms or spinach to the sauce for extra flavor and nutrition.
