2 cups cooked chicken, shredded
6 slices bacon, cooked and crumbled
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup ranch dressing
4 large flour tortillas
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
Instructions
In a large bowl, combine the shredded chicken, crumbled bacon, cheddar cheese, mozzarella cheese, ranch dressing, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Heat a large skillet over medium heat and add the olive oil.
Place one tortilla in the skillet and spread a generous portion of the chicken and bacon mixture over half of the tortilla.
Fold the tortilla in half and cook for about 3-4 minutes, or until the bottom is golden brown and the cheese is melted.
Carefully flip the quesadilla and cook for an additional 3-4 minutes on the other side.
Remove from the skillet and let it cool for a minute before cutting into wedges.
Repeat with the remaining tortillas and filling.
Notes
For a spicier kick, add diced jalapeños to the filling.
You can also substitute the ranch dressing with blue cheese dressing for a different flavor profile.
