A delicious and easy-to-make Chicken Bacon Ranch Quesadilla that combines shredded chicken, crispy bacon, and melted cheese with a creamy ranch dressing.

  • 2 cups cooked chicken, shredded
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup ranch dressing
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded chicken, crumbled bacon, cheddar cheese, mozzarella cheese, ranch dressing, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  2. Heat a large skillet over medium heat and add the olive oil.
  3. Place one tortilla in the skillet and spread a generous portion of the chicken and bacon mixture over half of the tortilla.
  4. Fold the tortilla in half and cook for about 3-4 minutes, or until the bottom is golden brown and the cheese is melted.
  5. Carefully flip the quesadilla and cook for an additional 3-4 minutes on the other side.
  6. Remove from the skillet and let it cool for a minute before cutting into wedges.
  7. Repeat with the remaining tortillas and filling.

Notes

  • For a spicier kick, add diced jalapeños to the filling.
  • You can also substitute the ranch dressing with blue cheese dressing for a different flavor profile.
