1 pound ground chicken
4 ounces bacon, chopped
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/2 cup diced ham
1/2 cup shredded mozzarella cheese
1/2 cup chopped onion
2 cloves garlic, minced
2 large eggs
1/4 cup milk
1 tablespoon Worcestershire sauce
1 teaspoon dried Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup ketchup (for topping)
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, cook the chopped bacon until crispy. Remove from heat and let it cool slightly.
In a large mixing bowl, combine the ground chicken, cooked bacon, breadcrumbs, Parmesan cheese, diced ham, mozzarella cheese, chopped onion, minced garlic, eggs, milk, Worcestershire sauce, Italian seasoning, salt, and black pepper. Mix until well combined.
Transfer the meat mixture into a loaf pan, shaping it into a loaf. Spread the ketchup evenly over the top.
Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 165°F (74°C).
Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
For added flavor, consider mixing in some chopped fresh herbs like parsley or basil.
Substitute ground turkey for the ground chicken for a leaner option, or use a combination of meats for a different taste.
