Delicious Cherry Cheesecake Brownies that combine rich chocolate brownie with creamy cheesecake and sweet cherry topping.

Ingredients

Scale
  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 can (21 ounces) cherry pie filling
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Mix well until smooth.
  3. Add the eggs one at a time, mixing well after each addition. Stir in 1 teaspoon of vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Pour half of the brownie batter into the prepared baking pan, spreading it evenly.
  6. In another bowl, beat the softened cream cheese with the powdered sugar and 1 teaspoon of vanilla extract until smooth and creamy.
  7. Dollop the cream cheese mixture over the brownie batter in the pan, then swirl it gently with a knife to create a marbled effect.
  8. Spoon the cherry pie filling over the cream cheese layer, spreading it evenly.
  9. Pour the remaining brownie batter on top, spreading it carefully to cover the cherries and cream cheese.
  10. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  11. Allow the brownies to cool in the pan for at least 30 minutes before cutting into squares.

Notes

  • For a richer flavor, try adding a teaspoon of almond extract to the cream cheese mixture.
  • You can substitute the cherry pie filling with raspberry or blueberry for a different fruit flavor.
  • For an extra crunch, sprinkle chopped nuts on top before baking.
