2 cups fresh or frozen cherries, pitted
2 cups fresh or frozen blueberries
1 cup granulated sugar, divided
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
1 cup milk
1 teaspoon cinnamon
Vanilla ice cream or whipped cream for serving (optional)
Instructions
Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
In a large bowl, combine the cherries, blueberries, 1/2 cup of sugar, lemon juice, and vanilla extract. Stir gently to coat the fruit, then pour the mixture into the prepared baking dish.
In another bowl, whisk together the flour, baking powder, salt, and remaining 1/2 cup of sugar.
Add the melted butter and milk to the dry ingredients and stir until just combined. The batter will be slightly lumpy; do not overmix.
Pour the batter evenly over the fruit mixture in the baking dish. Do not stir; the batter will rise as it bakes.
Sprinkle the cinnamon over the top of the batter.
Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
Allow the cobbler to cool for about 10 minutes before serving. Serve warm with vanilla ice cream or whipped cream if desired.
Notes
For a twist, add a teaspoon of almond extract to the fruit mixture for a different flavor profile.
Substitute half of the blueberries with raspberries for a mixed berry cobbler.
