Cheesy Zucchini Buns are a delicious low-carb treat made with grated zucchini and cheese, perfect for a healthy snack or side dish.

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 cup almond flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Cooking spray or olive oil for greasing

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the grated zucchinis and salt. Let it sit for about 10 minutes to draw out excess moisture.
  3. After 10 minutes, use a clean kitchen towel to squeeze out as much liquid as possible from the zucchini.
  4. Add the mozzarella cheese, Parmesan cheese, egg, almond flour, garlic powder, onion powder, black pepper, and red pepper flakes (if using) to the bowl with the zucchini. Mix well until all ingredients are thoroughly combined.
  5. Using your hands, form the mixture into small bun shapes (about 2-3 inches in diameter) and place them on the prepared baking sheet.
  6. Lightly spray the tops of the buns with cooking spray or brush with olive oil.
  7. Bake in the preheated oven for 20-25 minutes or until the buns are golden brown and firm to the touch.
  8. Remove from the oven and let cool for a few minutes before serving.
