1 large sweet onion
1 cup shredded mozzarella cheese
1/2 cup cream cheese, softened
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs
2 tablespoons fresh parsley, chopped
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Instructions
Preheat the oven to 375°F.
Cut the top off the onion and carefully scoop out the center, leaving about 1/2 inch of onion on the sides and bottom. Chop the removed onion pieces and set aside.
In a mixing bowl, combine the mozzarella cheese, cream cheese, Parmesan cheese, breadcrumbs, chopped onion, parsley, garlic powder, salt, and pepper. Mix until well combined.
Drizzle the inside of the hollowed onion with olive oil, then fill it with the cheese mixture, pressing down gently to pack it in.
Place the stuffed onion in a baking dish and cover it with aluminum foil. Bake for 30 minutes.
Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and the onion is tender.
Let cool for a few minutes before slicing into wedges to serve.
Notes
For a spicy kick, add 1/4 teaspoon of red pepper flakes to the cheese mixture.
You can also substitute the mozzarella with cheddar or pepper jack cheese for a different flavor profile.
