2 sheets of frozen puff pastry, thawed
1 cup fresh spinach, chopped
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 large egg
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 egg (for egg wash)
Sesame seeds (optional, for garnish)
Instructions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, combine the chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, one egg, garlic powder, salt, and black pepper. Mix until well combined.
Roll out each sheet of puff pastry on a lightly floured surface to smooth out any creases. Cut each sheet into 4 squares.
Place a generous spoonful of the cheese and spinach mixture in the center of each pastry square.
Fold the corners of the pastry over the filling to create a pocket and pinch the edges to seal. You can use a fork to crimp the edges for a decorative touch.
Place the stuffed pastries on the prepared baking sheet. In a small bowl, beat the remaining egg and brush it over the tops of the pastries. Sprinkle with sesame seeds if desired.
Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown and puffed up.
Remove from the oven and let cool for a few minutes before serving.
Notes
For added flavor, mix in some chopped sun-dried tomatoes or cooked bacon into the cheese mixture.
Substitute the spinach with other greens like kale or Swiss chard for a different taste.
