1 pound ground beef
1 small onion, diced
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 can (15 ounces) pizza sauce
8 large flour tortillas
2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
1/2 cup sliced black olives (optional)
1/4 cup chopped fresh cilantro (for garnish)
Sour cream (for serving)
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, brown the ground beef with the diced onion and minced garlic until the meat is fully cooked. Drain any excess fat.
Stir in the chili powder, cumin, salt, and black pepper. Add half of the pizza sauce to the skillet and mix well.
On a clean surface, lay out a tortilla and spoon about 1/4 cup of the beef mixture down the center. Top with a sprinkle of mozzarella cheese. Roll the tortilla tightly and place it seam-side down in a greased 9×13 inch baking dish. Repeat with the remaining tortillas.
Once all the tortillas are in the dish, pour the remaining pizza sauce over the top and sprinkle with the remaining mozzarella and cheddar cheese. Add black olives if desired.
Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro and serve with sour cream.
Notes
For a spicier kick, add diced jalapeños to the beef mixture or use spicy pizza sauce.
Substitute ground turkey or chicken for a leaner option, or use black beans for a vegetarian version.
