Cheesy Pizza Enchiladas are a delicious fusion of classic pizza flavors wrapped in soft tortillas, topped with gooey cheese and savory sauce.

1 pound ground beef
1 small onion, diced
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 can (15 ounces) pizza sauce
8 small flour tortillas
2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
1/2 cup sliced black olives (optional)
1/4 cup chopped fresh cilantro (for garnish)
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft, about 5-7 minutes. Drain any excess fat.
Stir in the garlic powder, chili powder, cumin, salt, and black pepper. Cook for an additional 2 minutes until the spices are fragrant.
Add 1 cup of pizza sauce to the beef mixture and stir until well combined.
Spread a thin layer of the remaining pizza sauce (about 1/2 cup) on the bottom of a 9×13-inch baking dish.
To assemble the enchiladas, place about 1/4 cup of the beef mixture and a sprinkle of mozzarella cheese in the center of each tortilla. Roll them up tightly and place seam-side down in the baking dish.
Once all tortillas are filled and placed in the dish, pour the remaining pizza sauce over the top and sprinkle with the remaining mozzarella and cheddar cheese.
If using, scatter the sliced black olives on top of the cheese.
Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
Remove from the oven and let cool for 5 minutes. Garnish with chopped cilantro before serving.
Notes
For a spicier kick, add diced jalapeños to the beef mixture or sprinkle red pepper flakes on top before baking.
Substitute ground turkey or chicken for a lighter option, or use black beans for a vegetarian version.
