- 8 cups fresh mushrooms, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 2 tablespoons fresh parsley, chopped (for garnish)
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the sliced mushrooms, thyme, salt, and pepper. Cook for about 8-10 minutes until the mushrooms are tender and have released their moisture.
- Remove the skillet from heat and stir in the heavy cream, mozzarella cheese, and half of the Parmesan cheese until well combined.
- Transfer the mixture to a greased 9×13-inch baking dish.
- In a small bowl, mix the breadcrumbs with the remaining Parmesan cheese. Sprinkle this mixture evenly over the mushroom mixture in the baking dish.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the mushroom mixture.
- You can substitute half of the heavy cream with sour cream for a tangy flavor.
