A delicious and creamy Cheesy Mushroom Bake that is perfect as a side dish or a main course.

  • 8 cups fresh mushrooms, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic and cook for an additional 1 minute until fragrant.
  4. Stir in the sliced mushrooms, thyme, salt, and pepper. Cook for about 8-10 minutes until the mushrooms are tender and have released their moisture.
  5. Remove the skillet from heat and stir in the heavy cream, mozzarella cheese, and half of the Parmesan cheese until well combined.
  6. Transfer the mixture to a greased 9×13-inch baking dish.
  7. In a small bowl, mix the breadcrumbs with the remaining Parmesan cheese. Sprinkle this mixture evenly over the mushroom mixture in the baking dish.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
  9. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the mushroom mixture.
  • You can substitute half of the heavy cream with sour cream for a tangy flavor.
