A comforting and cheesy casserole featuring kielbasa and potatoes, perfect for family dinners.

  • 2 cups diced potatoes (about 1 pound)
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 pound kielbasa, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, bring water to a boil and add the diced potatoes. Cook for about 10 minutes until slightly tender, then drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the sliced kielbasa to the skillet and cook until browned, about 5-7 minutes.
  5. In a large mixing bowl, combine the cooked potatoes, kielbasa mixture, cheddar cheese, mozzarella cheese, sour cream, garlic powder, paprika, salt, and pepper. Mix until well combined.
  6. Transfer the mixture to a greased 9×13-inch baking dish. If desired, sprinkle breadcrumbs on top for added crunch.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  8. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.

Notes

  • For a healthier twist, substitute half of the potatoes with cauliflower florets.
  • Add your favorite vegetables like bell peppers or broccoli for extra nutrition and flavor.
