2 cups diced potatoes (about 1 pound)
1 tablespoon olive oil
1 medium onion, chopped
1 pound kielbasa, sliced
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup sour cream
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
1/2 cup breadcrumbs (optional)
Fresh parsley for garnish (optional)
Instructions
Preheat your oven to 375°F (190°C).
In a large pot, bring water to a boil and add the diced potatoes. Cook for about 10 minutes until slightly tender, then drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Add the sliced kielbasa to the skillet and cook until browned, about 5-7 minutes.
In a large mixing bowl, combine the cooked potatoes, kielbasa mixture, cheddar cheese, mozzarella cheese, sour cream, garlic powder, paprika, salt, and pepper. Mix until well combined.
Transfer the mixture to a greased 9×13-inch baking dish. If desired, sprinkle breadcrumbs on top for added crunch.
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.
Notes
For a healthier twist, substitute half of the potatoes with cauliflower florets.
