A comforting and cheesy casserole made with ground beef, macaroni, and topped with cheddar cheese.

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 can (8 ounces) tomato sauce
  • 1 cup uncooked elbow macaroni
  • 2 cups beef broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • ½ cup sour cream
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the ground beef to the skillet, cooking until browned. Drain excess fat if necessary.
  4. Stir in the diced tomatoes, tomato sauce, uncooked elbow macaroni, beef broth, Italian seasoning, salt, and black pepper. Bring the mixture to a boil.
  5. Reduce heat to low, cover, and simmer for 10-12 minutes, or until the macaroni is tender.
  6. Remove from heat and stir in the sour cream and 1 cup of shredded cheddar cheese until well combined.
  7. Transfer the mixture to a greased 9×13-inch baking dish. Top with the remaining cup of cheddar cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
  9. Let it cool for a few minutes before serving.

Notes

  • For a spicier kick, add 1 teaspoon of red pepper flakes or diced jalapeños to the beef mixture.
  • Substitute ground turkey or chicken for a leaner option, and use whole wheat pasta for added fiber.
