  • 4 boneless, skinless chicken breasts
  • 1 cup mushrooms, finely chopped
  • 4 tablespoons unsalted butter, divided
  • 3 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, melt 2 tablespoons of butter. Add the chopped mushrooms and sauté for about 5 minutes until they are soft and any moisture has evaporated.
  3. Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the sautéed mushrooms, mozzarella cheese, cream cheese, salt, pepper, and paprika. Mix until well combined.
  5. Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
  6. Stuff each chicken breast with the mushroom and cheese mixture, securing the opening with toothpicks if necessary.
  7. In the same skillet, melt the remaining 2 tablespoons of butter over medium-high heat. Add the stuffed chicken breasts and sear for 3-4 minutes on each side until golden brown.
  8. Transfer the seared chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  9. Remove from the oven, let rest for 5 minutes, and garnish with fresh parsley before serving.
