2 cups fresh broccoli florets
1 cup cooked rice (white or brown)
1 cup shredded cheddar cheese
1/2 cup cream of mushroom soup
1/2 cup milk
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1/2 cup breadcrumbs (optional)
1 tablespoon olive oil (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a large pot, bring water to a boil. Add the broccoli florets and blanch for about 3 minutes until bright green and slightly tender. Drain and set aside.
In a large mixing bowl, combine the cooked rice, cheddar cheese, cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are combined.
Fold in the blanched broccoli until evenly distributed.
Transfer the mixture to a greased 9×13-inch baking dish.
If using breadcrumbs, mix them with olive oil in a small bowl and sprinkle evenly over the casserole.
Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
Remove from the oven and let it cool for a few minutes before serving.
Notes
For a protein boost, add cooked chicken or turkey to the mixture before baking.
Try using different cheese varieties, such as mozzarella or pepper jack, for a unique flavor twist.
