Cheesy Beef and Potato Burritos are a must-try for a delicious and hearty meal.

  • 1 pound ground beef
  • 1 cup diced potatoes (about 1 medium potato)
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 cup salsa
  • 1 tablespoon olive oil
  • Sour cream and chopped cilantro for serving (optional)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the diced potatoes and cook for about 5-7 minutes, stirring occasionally, until they start to soften.
  2. Add the ground beef to the skillet with the potatoes. Cook until the beef is browned and cooked through, about 8-10 minutes. Drain any excess fat.
  3. Stir in the garlic powder, onion powder, chili powder, cumin, salt, and pepper. Mix well and cook for an additional 2-3 minutes to combine the flavors.
  4. Remove the skillet from heat and stir in the shredded cheddar cheese until melted and well combined.
  5. Preheat your oven to 350°F. Lay out the flour tortillas and evenly distribute the beef and potato mixture among them. Roll each tortilla tightly, tucking in the ends as you go.
  6. Place the burritos seam-side down in a baking dish. Pour salsa over the top of the burritos and sprinkle with any remaining cheese if desired.
  7. Bake in the preheated oven for 15-20 minutes until heated through and the cheese is bubbly.

Notes

  • For a spicier kick, add diced jalapeños to the beef mixture or use a spicy salsa.
  • Substitute ground turkey or chicken for a leaner option, and try adding black beans for extra fiber and flavor.
