1 pound ground beef
1 cup diced potatoes (about 1 medium potato)
1 cup shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste
4 large flour tortillas
1 cup salsa
1 tablespoon olive oil
Sour cream and chopped cilantro for serving (optional)
Instructions
In a large skillet, heat olive oil over medium heat. Add the diced potatoes and cook for about 5-7 minutes, stirring occasionally, until they start to soften.
Add the ground beef to the skillet with the potatoes. Cook until the beef is browned and cooked through, about 8-10 minutes. Drain any excess fat.
Stir in the garlic powder, onion powder, chili powder, cumin, salt, and pepper. Mix well and cook for an additional 2-3 minutes to combine the flavors.
Remove the skillet from heat and stir in the shredded cheddar cheese until melted and well combined.
Preheat your oven to 350°F. Lay out the flour tortillas and evenly distribute the beef and potato mixture among them. Roll each tortilla tightly, tucking in the ends as you go.
Place the burritos seam-side down in a baking dish. Pour salsa over the top of the burritos and sprinkle with any remaining cheese if desired.
Bake in the preheated oven for 15-20 minutes until heated through and the cheese is bubbly.
Notes
For a spicier kick, add diced jalapeños to the beef mixture or use a spicy salsa.
Substitute ground turkey or chicken for a leaner option, and try adding black beans for extra fiber and flavor.
