A delightful recipe for Cheesy Beef Potato Burritos that combines ground beef, tender potatoes, and melted cheddar cheese wrapped in flour tortillas.

1 pound ground beef
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste
2 medium potatoes, peeled and diced
1 cup shredded cheddar cheese
4 large flour tortillas
1 cup salsa
1 tablespoon olive oil
Instructions
In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook for about 10 minutes, stirring occasionally, until they are tender and lightly browned. Remove the potatoes from the skillet and set aside.
In the same skillet, add the ground beef. Cook over medium heat until browned, breaking it apart with a spatula. Drain excess fat if necessary.
Stir in the garlic powder, onion powder, chili powder, cumin, salt, and pepper. Cook for another 2-3 minutes until the spices are fragrant.
Add the cooked potatoes back into the skillet with the beef mixture. Stir to combine and cook for an additional 2 minutes. Remove from heat and stir in the shredded cheddar cheese until melted.
To assemble the burritos, lay a tortilla flat on a clean surface. Spoon about 1/4 of the beef and potato mixture onto the center of the tortilla. Drizzle with salsa, then fold in the sides and roll up tightly from the bottom.
Repeat with the remaining tortillas and filling.
If desired, place the burritos seam-side down in a skillet over medium heat for 2-3 minutes on each side to crisp them up. Serve warm with extra salsa on the side.
Notes
For a spicier kick, add diced jalapeños to the beef mixture.
Substitute ground turkey or chicken for a leaner option.
