1 pound ground beef
2 medium potatoes, peeled and diced (about 2 cups)
1 cup shredded cheddar cheese
1 cup diced onion
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste
4 large flour tortillas
1 cup sour cream (for serving)
1 cup salsa (for serving)
Fresh cilantro, chopped (optional, for garnish)
Instructions
In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula. Drain excess fat if necessary.
Add the diced onion and minced garlic to the skillet. Cook for about 3-4 minutes until the onion is translucent.
Stir in the diced potatoes, chili powder, cumin, salt, and pepper. Cover the skillet and cook for 10-15 minutes, stirring occasionally, until the potatoes are tender.
Once the potatoes are cooked, remove the skillet from heat and stir in the shredded cheddar cheese until melted and well combined.
Warm the flour tortillas in a separate skillet or microwave for a few seconds until pliable.
Spoon a generous amount of the beef and potato mixture onto the center of each tortilla. Fold in the sides and roll up tightly to form a burrito.
If desired, place the burritos seam-side down in a skillet over medium heat for 2-3 minutes to crisp the outside.
Serve warm with sour cream, salsa, and chopped cilantro on top.
Notes
For a spicier kick, add diced jalapeños or a dash of hot sauce to the beef mixture.
Substitute ground turkey or chicken for a leaner option, and use sweet potatoes for a different flavor profile.
