1 pound ground beef
1 small onion, diced
2 cloves garlic, minced
1 small head of green cabbage, chopped (about 4 cups)
1 can (14.5 ounces) diced tomatoes, undrained
1 teaspoon dried oregano
1 teaspoon paprika
Salt and pepper to taste
2 cups shredded cheddar cheese
1 cup beef broth
1 tablespoon olive oil
Instructions
In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
Stir in the chopped cabbage, diced tomatoes (with juice), beef broth, oregano, paprika, salt, and pepper. Mix well and bring to a simmer.
Cover the skillet and cook for about 10-15 minutes, stirring occasionally, until the cabbage is tender.
Once the cabbage is cooked, sprinkle the shredded cheddar cheese evenly over the top. Cover the skillet again and let it sit for 2-3 minutes, until the cheese is melted.
Serve hot, garnished with additional cheese or fresh herbs if desired.
Notes
For a spicier version, add 1/2 teaspoon of red pepper flakes when cooking the beef.
To make it a one-pan meal, serve with a side of crusty bread or over cooked rice or quinoa for added texture and flavor.
