A hearty and flavorful Cheesy Beef and Cabbage Skillet Casserole that combines ground beef, cabbage, and melted cheddar cheese for a comforting meal.

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 small head of green cabbage, chopped (about 4 cups)
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 1 cup beef broth
  • 1 tablespoon olive oil

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  2. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  3. Stir in the chopped cabbage, diced tomatoes (with juice), beef broth, oregano, paprika, salt, and pepper. Mix well and bring to a simmer.
  4. Cover the skillet and cook for about 10-15 minutes, stirring occasionally, until the cabbage is tender.
  5. Once the cabbage is cooked, sprinkle the shredded cheddar cheese evenly over the top. Cover the skillet again and let it sit for 2-3 minutes, until the cheese is melted.
  6. Serve hot, garnished with additional cheese or fresh herbs if desired.

Notes

  • For a spicier version, add 1/2 teaspoon of red pepper flakes when cooking the beef.
  • To make it a one-pan meal, serve with a side of crusty bread or over cooked rice or quinoa for added texture and flavor.
