2 large chicken breasts (about 1 pound total)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Salt and pepper to taste
1 tablespoon olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, mix together the garlic powder, onion powder, paprika, salt, and pepper.
Rub the chicken breasts with olive oil and then coat them evenly with the spice mixture.
Place the chicken breasts in a baking dish. Arrange the sliced red and yellow bell peppers around the chicken.
Bake in the preheated oven for 25 minutes.
Remove the dish from the oven and sprinkle the mozzarella and Parmesan cheese evenly over the chicken and peppers.
Return to the oven and bake for an additional 10-15 minutes, or until the chicken is cooked through (internal temperature should reach 165°F) and the cheese is bubbly and golden.
Let it rest for 5 minutes before serving. Garnish with chopped parsley if desired.
Notes
For added flavor, marinate the chicken in the spice mixture and olive oil for 30 minutes before baking.
Substitute the bell peppers with other vegetables like zucchini or broccoli for a different taste and texture.
