Cheesy Au Gratin Potatoes are a creamy, cheesy, and comforting dish made with layers of thinly sliced potatoes and a rich cheese sauce.

  • 2 pounds russet potatoes, peeled and thinly sliced
  • 1 medium onion, thinly sliced
  • 2 cups shredded sharp cheddar cheese
  • 1 cup heavy cream
  • 1 cup whole milk
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter.
  2. In a saucepan over medium heat, melt the butter. Stir in the flour and cook for about 1 minute until bubbly.
  3. Gradually whisk in the heavy cream and milk, stirring constantly until the mixture thickens, about 3-5 minutes.
  4. Add garlic powder, salt, black pepper, paprika, and cayenne pepper (if using) to the sauce. Remove from heat and stir in 1 cup of the shredded cheddar cheese until melted.
  5. Layer half of the sliced potatoes in the prepared baking dish, followed by half of the sliced onions. Pour half of the cheese sauce over the top.
  6. Repeat with the remaining potatoes, onions, and cheese sauce.
  7. Cover the dish with aluminum foil and bake for 45 minutes.
  8. Remove the foil, sprinkle the remaining cheese on top, and bake for an additional 20-25 minutes, or until the potatoes are tender and the cheese is bubbly and golden brown.
  9. Let it cool for 10 minutes before serving.

  • For a richer flavor, try adding cooked bacon or ham between the layers.
