1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
3 medium potatoes, peeled and diced
4 cups beef broth
1 cup carrots, diced
1 cup celery, diced
1 teaspoon dried basil
1 teaspoon dried parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup milk
1 cup shredded cheddar cheese
1/4 cup cream cheese, softened
1/4 cup sour cream
1 tablespoon Worcestershire sauce
Chopped green onions or bacon bits for garnish (optional)
Instructions
In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat and add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
Add the diced potatoes, carrots, celery, beef broth, basil, parsley, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the vegetables are tender.
Stir in the milk, cheddar cheese, cream cheese, sour cream, and Worcestershire sauce. Cook over low heat until the cheese is melted and the soup is heated through, about 5 minutes. Do not boil.
Taste and adjust seasoning if necessary. Serve hot, garnished with chopped green onions or bacon bits if desired.
Notes
For a spicier kick, add a teaspoon of hot sauce or diced jalapeños.
Substitute ground turkey or chicken for a lighter version of the soup.
