Cheese-Crusted Steak Quesadillas are a delicious and flavorful dish featuring tender flank steak, sautéed vegetables, and a cheesy filling, all encased in crispy tortillas.

  • 1 pound flank steak
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 large flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1 cup sliced bell peppers (any color)
  • 1 cup sliced onions
  • 1/4 cup fresh cilantro, chopped (optional)
  • Sour cream and salsa for serving

Instructions

  1. Preheat a grill or skillet over medium-high heat.
  2. Season the flank steak with garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Add olive oil to the grill or skillet, then cook the steak for about 4-5 minutes on each side, or until it reaches your desired doneness. Remove from heat and let it rest for 5 minutes before slicing thinly against the grain.
  4. In the same skillet, add sliced bell peppers and onions. Sauté for about 3-4 minutes until they are tender. Remove from heat.
  5. Place a tortilla in the skillet over medium heat. Sprinkle half of the Monterey Jack and cheddar cheese evenly over the tortilla.
  6. Layer half of the sliced steak and sautéed vegetables on top of the cheese. Sprinkle the remaining cheese over the filling, then top with another tortilla.
  7. Cook for about 3-4 minutes until the bottom tortilla is golden brown and the cheese has melted. Carefully flip the quesadilla and cook for another 3-4 minutes on the other side.
  8. Remove from the skillet and let it cool for a minute before cutting into wedges. Repeat with the remaining tortillas and filling.
  9. Serve warm with sour cream, salsa, and chopped cilantro if desired.

Notes

  • For a spicier kick, add sliced jalapeños to the filling or use pepper jack cheese instead of Monterey Jack.
  • Substitute the flank steak with grilled chicken or shrimp for a different protein option.
