2 pounds boneless, skinless chicken thighs
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup fresh orange juice (about 2 oranges)
1/4 cup pure maple syrup
1 tablespoon soy sauce
1 tablespoon apple cider vinegar
1 teaspoon grated orange zest
1/4 teaspoon red pepper flakes (optional)
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, combine the olive oil, salt, black pepper, garlic powder, and onion powder. Add the chicken thighs and toss to coat evenly.
In a separate bowl, whisk together the orange juice, maple syrup, soy sauce, apple cider vinegar, orange zest, and red pepper flakes (if using).
Heat a large oven-safe skillet over medium-high heat. Add the chicken thighs and sear for about 4-5 minutes on each side until golden brown.
Pour the orange maple mixture over the chicken in the skillet. Bring to a simmer and then transfer the skillet to the preheated oven.
Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Remove the skillet from the oven and let the chicken rest for 5 minutes. Spoon the sauce over the chicken and garnish with chopped parsley before serving.
Notes
For a spicier kick, add more red pepper flakes or a dash of hot sauce to the marinade.
Serve the chicken over rice or quinoa to soak up the delicious sauce, or pair it with steamed vegetables for a lighter option.
