A delicious recipe for cod fillets topped with caramelized onions and a crunchy walnut crust.

  • 2 medium onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt, divided
  • 1 teaspoon sugar
  • 1 cup walnuts, finely chopped
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 pound cod fillets
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and 1/2 teaspoon of salt. Cook, stirring occasionally, for about 15-20 minutes until the onions are soft and caramelized. Stir in the sugar and cook for an additional 5 minutes. Remove from heat and let cool slightly.
  2. Preheat the oven to 400°F.
  3. In a mixing bowl, combine the chopped walnuts, breadcrumbs, garlic powder, dried thyme, and the remaining 1/2 teaspoon of salt.
  4. In a separate bowl, mix together the Dijon mustard and lemon juice. Brush this mixture over the cod fillets.
  5. Press the walnut and breadcrumb mixture onto the top of each cod fillet to create a crust.
  6. Place the crusted cod fillets on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until the fish flakes easily with a fork and the crust is golden brown.
  7. Serve the cod topped with caramelized onions and garnish with fresh parsley.

Notes

  • For added flavor, try mixing in some grated Parmesan cheese with the walnut and breadcrumb mixture.
  • Substitute the cod with other firm white fish like halibut or tilapia for a different taste.
