A delicious Caramelized Banana Cheesecake topped with a rich Rum Frosting that will delight your taste buds.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2 ripe bananas, sliced
  • 2 tablespoons unsalted butter
  • ¼ cup brown sugar
  • 1 tablespoon rum (optional)
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 tablespoon rum (optional)

Instructions

  1. Preheat the oven to 325°F (160°C). In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  2. In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy. Add the vanilla extract and mix until combined.
  3. Add the eggs one at a time, mixing well after each addition. Pour the cheesecake batter over the cooled crust.
  4. In a skillet over medium heat, melt 2 tablespoons of butter. Add the sliced bananas and brown sugar, cooking until the bananas are caramelized, about 3-4 minutes. If using, add the rum and cook for an additional minute. Remove from heat and let cool slightly.
  5. Gently fold the caramelized bananas into the cheesecake batter. Pour the mixture back into the springform pan.
  6. Bake the cheesecake for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually. Remove from the oven and refrigerate for at least 4 hours, preferably overnight.
  7. For the rum frosting, whip the heavy cream and powdered sugar together in a mixing bowl until soft peaks form. If using, add the rum and mix until combined.
  8. Once the cheesecake is chilled, remove it from the springform pan and spread the rum frosting evenly on top.
  9. Slice and serve chilled. Enjoy!

Notes

  • For a chocolate twist, add ½ cup of cocoa powder to the cheesecake batter for a chocolate banana cheesecake.
  • Top the cheesecake with additional caramelized bananas or a drizzle of chocolate sauce for an extra indulgent dessert.
