- 8 ounces cheese tortellini
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 pound smoked sausage, sliced
- 1 teaspoon Cajun seasoning
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
- 1 tablespoon chopped fresh parsley (for garnish)
- Cook the cheese tortellini according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until softened.
- Add the minced garlic and diced bell pepper to the skillet. Cook for an additional 2-3 minutes until the peppers are tender.
- Stir in the sliced smoked sausage and Cajun seasoning. Cook for 5-7 minutes until the sausage is heated through and slightly browned.
- Reduce the heat to low and pour in the heavy cream. Stir to combine, then gradually add the grated Parmesan cheese, stirring until melted and smooth.
- Add the cooked tortellini to the skillet and gently toss to coat in the sauce. Season with salt and pepper to taste.
- Cook for an additional 2-3 minutes until everything is heated through.
- Remove from heat and garnish with sliced green onions and chopped parsley before serving.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the skillet when cooking the sausage.
