A creamy and flavorful dish featuring cheese tortellini and smoked sausage, seasoned with Cajun spices.

  • 8 ounces cheese tortellini
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 pound smoked sausage, sliced
  • 1 teaspoon Cajun seasoning
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Cook the cheese tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until softened.
  3. Add the minced garlic and diced bell pepper to the skillet. Cook for an additional 2-3 minutes until the peppers are tender.
  4. Stir in the sliced smoked sausage and Cajun seasoning. Cook for 5-7 minutes until the sausage is heated through and slightly browned.
  5. Reduce the heat to low and pour in the heavy cream. Stir to combine, then gradually add the grated Parmesan cheese, stirring until melted and smooth.
  6. Add the cooked tortellini to the skillet and gently toss to coat in the sauce. Season with salt and pepper to taste.
  7. Cook for an additional 2-3 minutes until everything is heated through.
  8. Remove from heat and garnish with sliced green onions and chopped parsley before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the skillet when cooking the sausage.
  • You can also substitute the smoked sausage with grilled chicken or shrimp for a different protein option.
