  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 (3.4 oz) package instant butterscotch pudding mix
  • 2 cups cold milk
  • 1 (8 oz) container whipped topping, thawed
  • 1/2 cup butterscotch sauce, plus extra for drizzling
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, sugar, and salt. Mix until well combined.
  2. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form the crust. Bake for 8-10 minutes, or until lightly golden. Remove from the oven and let cool completely.
  3. In another bowl, whisk together the instant butterscotch pudding mix and cold milk until smooth and thickened, about 2 minutes.
  4. Gently fold in half of the whipped topping into the pudding mixture until well combined.
  5. Pour the butterscotch pudding mixture into the cooled graham cracker crust, spreading it evenly.
  6. Top the pudding layer with the remaining whipped topping, smoothing it out to cover completely.
  7. Drizzle the butterscotch sauce over the top and sprinkle with chopped nuts, if using.
  8. Refrigerate the pie for at least 2 hours before serving to allow it to set properly.

Notes

  • For a chocolate twist, use chocolate pudding mix instead of butterscotch and top with chocolate shavings.
  • Add a layer of sliced bananas or a layer of crushed pineapple for added flavor and texture.
