2 lbs boneless, skinless chicken thighs
1 cup brown sugar
1 cup pineapple juice
1/4 cup soy sauce
1 tablespoon minced garlic
1 tablespoon minced ginger
1 teaspoon black pepper
1/2 teaspoon salt
1 tablespoon vegetable oil
1 cup fresh pineapple chunks (optional for garnish)
2 green onions, sliced (optional for garnish)
Instructions
In a large bowl, whisk together the brown sugar, pineapple juice, soy sauce, minced garlic, minced ginger, black pepper, and salt until the sugar is dissolved.
Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
Preheat your grill or a large skillet over medium-high heat and add the vegetable oil.
Remove the chicken from the marinade, allowing excess marinade to drip off. Reserve the marinade for later use.
Grill or cook the chicken in the skillet for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
While the chicken is cooking, pour the reserved marinade into a saucepan and bring it to a boil. Reduce heat and simmer for about 5-7 minutes until slightly thickened.
Brush the thickened marinade over the chicken during the last few minutes of cooking.
Remove the chicken from the heat and let it rest for 5 minutes before slicing.
Serve the chicken topped with fresh pineapple chunks and sliced green onions, if desired.
Notes
For a spicy kick, add 1 teaspoon of red pepper flakes to the marinade.
Serve the chicken over rice or quinoa to soak up the delicious sauce.
