- 1 cup cooked and finely chopped broccoli
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup crumbled feta cheese
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- In a medium bowl, combine the flour, cocoa powder, baking powder, and salt.
- In a large bowl, whisk together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chopped broccoli and crumbled feta cheese until evenly distributed.
