A surprising healthy treat that combines the goodness of broccoli with the rich flavor of feta cheese in a brownie form.

  • 1 cup cooked and finely chopped broccoli
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup crumbled feta cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a medium bowl, combine the flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, whisk together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chopped broccoli and crumbled feta cheese until evenly distributed.
  6. Pour the batter into the prepared baking pan and spread it evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for 10 minutes before slicing into squares.

Notes

  • For a richer flavor, try adding 1/4 cup of chopped walnuts or pecans to the batter.
