8 ounces brie cheese, rind removed and cut into small pieces
1 large onion, thinly sliced
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
1 cup sour cream
1 cup cream cheese, softened
1 cup shredded mozzarella cheese
1 tablespoon chopped fresh parsley (for garnish)
Instructions
In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 15-20 minutes until they are soft and caramelized. Stir in the balsamic vinegar, thyme, garlic powder, salt, and pepper. Cook for an additional 2-3 minutes, then remove from heat and let cool slightly.
In a mixing bowl, combine the softened cream cheese and sour cream until smooth.
Add the caramelized onion mixture and brie cheese to the bowl, mixing until well combined.
Fold in the shredded mozzarella cheese until evenly distributed.
Transfer the mixture to a baking dish and spread it out evenly.
Preheat the oven to 350°F (175°C). Bake the dip for 20-25 minutes, or until it is bubbly and golden on top.
Remove from the oven and let it cool for a few minutes. Garnish with chopped parsley before serving.
Notes
For a spicier kick, add a pinch of red pepper flakes to the onion mixture while caramelizing.
Serve with a variety of dippers such as sliced baguette, crackers, or fresh vegetable sticks for a fun appetizer platter.
