4 cups fresh peaches, peeled and diced
1 cup granulated sugar
1/4 cup bourbon
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 packet (1.75 oz) fruit pectin (like Sure-Jell)
Instructions
In a large pot, combine the diced peaches, sugar, bourbon, lemon juice, cinnamon, and salt. Stir well and let the mixture sit for about 30 minutes to allow the peaches to release their juices.
After 30 minutes, place the pot over medium heat and bring the mixture to a boil, stirring frequently. Once boiling, add the fruit pectin and continue to stir for 1-2 minutes until the mixture is well combined and starts to thicken.
Reduce the heat to low and let the jam simmer for about 10 minutes, stirring occasionally. Skim off any foam that forms on the surface.
To test the jam’s consistency, place a spoonful on a cold plate and let it sit for a minute. Run your finger through the jam; if it holds its shape, it’s ready to be jarred. If not, continue simmering for a few more minutes.
Once ready, remove the pot from heat and carefully ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the rims of the jars with a clean cloth to ensure a good seal.
Seal the jars with lids and process them in a boiling water bath for 10 minutes to ensure they are properly preserved. Remove the jars and let them cool completely on a clean kitchen towel.
Once cooled, check the seals by pressing down in the center of each lid. If it doesn’t pop back, the jar is sealed. Store sealed jars in a cool, dark place. Refrigerate any unsealed jars and use within a few weeks.
Notes
For a spicier kick, add a pinch of cayenne pepper or a few slices of fresh ginger to the peach mixture before boiling.
Substitute the bourbon with rum or brandy for a different flavor profile, or omit the alcohol entirely for a non-alcoholic version.
