1 pound ground beef
1/2 pound bacon, cooked and crumbled
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1 large egg
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup bourbon BBQ sauce
4 sub rolls
8 slices cheddar cheese
Pickles and sliced onions for topping (optional)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, combine the ground beef, crumbled bacon, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, onion powder, salt, and pepper. Mix until just combined.
Form the mixture into meatballs, about 1.5 inches in diameter, and place them on the prepared baking sheet.
Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and browned.
In the last 5 minutes of baking, brush the meatballs with bourbon BBQ sauce and top each with a slice of cheddar cheese. Return to the oven until the cheese is melted.
While the meatballs are baking, warm the sub rolls in the oven for the last 5 minutes.
To assemble, place 2-3 meatballs in each sub roll, drizzle with extra BBQ sauce, and top with pickles and sliced onions if desired.
Notes
For a spicier kick, add some chopped jalapeños to the meatball mixture.
For a lighter option, substitute ground turkey for the beef and use turkey bacon.
