1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
4 cups bok choy, chopped
1 red bell pepper, sliced
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon cornstarch mixed with 1 tablespoon water
Salt and pepper to taste
Sesame seeds for garnish (optional)
Instructions
In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
In the same skillet, add the chopped bok choy and sliced red bell pepper. Stir-fry for about 4-5 minutes until the vegetables are tender but still crisp.
Return the shrimp to the skillet. Pour in the soy sauce and sesame oil, stirring to combine.
Add the cornstarch mixture to the skillet and cook for an additional 1-2 minutes until the sauce thickens. Season with salt and pepper to taste.
Serve hot, garnished with sesame seeds if desired.
Notes
For added heat, include a pinch of red pepper flakes when sautéing the garlic and ginger.
Substitute the shrimp with chicken or tofu for a different protein option.
