  • 8 ounces cream cheese, softened
  • 1 cup fresh blueberries
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon ground cinnamon
  • 1 tablespoon sugar
  • Butter or oil for cooking
  • Maple syrup for serving

Instructions

  1. In a medium bowl, mix the softened cream cheese, fresh blueberries, and vanilla extract until well combined. Set aside.
  2. In another bowl, whisk together the eggs, milk, cinnamon, and sugar until smooth.
  3. Take four slices of bread and spread a generous amount of the blueberry cream cheese mixture on each. Top with the remaining four slices to create sandwiches.
