Blueberry Monkey Bread Muffins are a must-try treat that combines the fun of monkey bread with the convenience of muffins, featuring fresh blueberries and a hint of cinnamon.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or line it with paper liners.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon until well combined.
  3. In another bowl, mix the milk, melted butter, egg, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the blueberries until evenly distributed throughout the batter.
  6. Using a spoon or ice cream scoop, fill each muffin cup about 2/3 full with the batter.
  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, dust the muffins with powdered sugar before serving.

Notes

  • For a twist, try adding a teaspoon of lemon zest to the batter for a refreshing citrus flavor.
  • You can also substitute the blueberries with raspberries or chopped strawberries for a different fruity taste.
