1 cup fresh blueberries
4 oz cream cheese, softened
1/4 cup powdered sugar
1 teaspoon vanilla extract
8 egg roll wrappers
1 egg, beaten (for sealing)
Vegetable oil (for frying)
Powdered sugar (for dusting, optional)
Instructions
In a medium bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and fresh blueberries. Mix until well combined and set aside.
Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Place about 2 tablespoons of the blueberry cream cheese mixture in the center of the wrapper.
Brush the edges of the wrapper with the beaten egg to help seal it. Fold the bottom corner over the filling, then fold in the sides, and roll it up tightly. Repeat with the remaining wrappers and filling.
In a large skillet, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F.
Carefully place the egg rolls in the hot oil, a few at a time, and fry for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.
Dust with powdered sugar before serving, if desired. Serve warm.
Notes
For a twist, add a teaspoon of lemon zest to the cream cheese mixture for a citrusy flavor.
Try using different fruits like strawberries or raspberries in place of blueberries for variety.
