1 cup graham cracker crumbs
1/2 cup unsalted butter, melted
1 (8 oz) package cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup whipped topping (like Cool Whip)
2 cups fresh blueberries
1/4 cup granulated sugar
1 tablespoon lemon juice
Instructions
In a medium bowl, combine graham cracker crumbs and melted butter. Mix until well combined. Press the mixture into the bottom of a 9-inch square baking dish to form the crust. Refrigerate for 10 minutes to set.
In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Gently fold in the whipped topping until fully incorporated.
Spread the cream cheese mixture evenly over the chilled crust.
In a separate bowl, combine the blueberries, granulated sugar, and lemon juice. Toss gently to coat the blueberries in the sugar and lemon juice.
Spoon the blueberry mixture over the cream cheese layer, spreading it evenly.
Cover the dish with plastic wrap and refrigerate for at least 2 hours before serving to allow the flavors to meld and the dessert to set.
Notes
For a twist, try using raspberries or strawberries instead of blueberries.
You can also add a layer of lemon curd between the cream cheese and blueberry layers for an extra zing.
