1 cup fresh blueberries
1/2 cup unsalted butter, softened
1/4 cup powdered sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
In a medium saucepan over medium heat, combine the blueberries and 2 tablespoons of water. Cook for about 5-7 minutes, stirring occasionally, until the blueberries are soft and have released their juices.
Remove the saucepan from heat and let the blueberry mixture cool slightly. Then, mash the blueberries with a fork or potato masher until you achieve a chunky consistency.
In a mixing bowl, combine the softened butter, powdered sugar, vanilla extract, and salt. Beat with an electric mixer on medium speed until the mixture is creamy and well combined.
Fold the mashed blueberries into the butter mixture until evenly incorporated.
Transfer the blueberry butter to a small container or jar. Cover and refrigerate for at least 1 hour to allow the flavors to meld.
Notes
For a sweeter blueberry butter, increase the powdered sugar to 1/3 cup.
Try adding a teaspoon of lemon zest for a refreshing citrus twist.
