1 pound pork tenderloin
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup heavy cream
2 tablespoons Dijon mustard
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F.
Pat the pork tenderloin dry with paper towels. Rub the olive oil over the tenderloin and season it with salt, black pepper, garlic powder, and onion powder.
Heat a large oven-safe skillet over medium-high heat. Once hot, add the seasoned pork tenderloin and sear it for about 3-4 minutes on each side until browned.
Transfer the skillet to the preheated oven and roast the pork for 15-20 minutes, or until the internal temperature reaches 145°F.
Remove the skillet from the oven and transfer the pork to a cutting board. Cover it loosely with foil and let it rest for 5-10 minutes.
While the pork is resting, prepare the sauce in the same skillet. Over medium heat, add the heavy cream and Dijon mustard, stirring well to combine. Cook for 2-3 minutes until the sauce is heated through and slightly thickened.
Slice the pork tenderloin into medallions and serve with the creamy Dijon sauce drizzled on top. Garnish with chopped parsley.
Notes
For a sweeter sauce, add a teaspoon of honey or maple syrup to the creamy Dijon sauce.
Serve with roasted vegetables or mashed potatoes for a complete meal.
